Hi, I’m Ennas López, the heart and soul behind Kali Recipes. For the past 8 years, I’ve been bridging the flavors of my Spanish heritage with the vibrant food culture of America.

Kali Recipes was born from my belief that great food transcends borders—and from my son Kali’s endless curiosity about both his Spanish heritage and American favorites. Named after my little taste-tester who always asks “¿Por qué no los dos?” (why not both?), this blog celebrates the delicious possibilities when cultures meet on a plate.
Originally from Valencia, Spain, I moved to Chicago 15 years ago and discovered a whole new world of culinary possibilities. Whether it’s adding Midwest ingredients to traditional paella or creating tapas with local farmers’ market finds, I love showing how cultures can dance together on a plate.
What I Offer:
Authentic Spanish Recipes:
From my grandmother’s paella to perfect tortilla española, discover traditional Spanish dishes with step-by-step guidance that makes them accessible to American home cooks.
Creative Fusion:
Experience my Spanish-American fusion creations where tradition meets innovation. Think chorizo mac and cheese, gazpacho with heirloom tomatoes, and piquillo pepper sliders.
Tips & Techniques:
Learn practical cooking tips, from mastering the perfect sofrito to finding Spanish ingredient substitutes at your local grocery store. I make Spanish cooking approachable for everyone.
My Kitchen Philosophy
I believe that cooking is about more than just following recipes—it’s about creating memories, sharing culture, and bringing people together. In my Chicago kitchen, you’ll find Spanish olive oil next to Midwest honey, pimentón sharing space with BBQ rubs, and Manchego cheese alongside Wisconsin cheddar.
My approach is simple: respect tradition while embracing innovation. Every recipe I share has been tested in my home kitchen, tweaked for American kitchens and ingredients, and approved by my toughest critics—my American husband Michael and our son Kali, who’s grown up with one foot in each culture and a palate that appreciates both.

Why Kali Recipes?
Kali Recipes is more than just a food blog—it’s named after my son Kali, who represents the beautiful blend of cultures that happens when Spain meets America. Just like him, these recipes are a celebration of both worlds. Through his eyes, I’ve learned to see food as a bridge between my childhood in Valencia and our life in Chicago. When Kali helps me in the kitchen, asking questions in both English and Spanish, tasting everything with the honesty only a child can have, he reminds me why I started this journey.
