Instructions

- In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until evenly combined.
- With a hand mixer or stand mixer, beat the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy—about 2 minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in the quick oats and diced apples gently with a spatula.
- Line two baking sheets with parchment paper. Scoop tablespoon-sized balls of dough onto the sheets, spacing them 2 inches apart. Sprinkle with coarse sugar if desired.
