Description

These Apple Pie Cookies bring the comforting flavors of classic apple pie into a delightful, bite-sized cookie. They are soft, chewy, and packed with spiced apple goodness, making them a perfect treat for any occasion.

Ingredients

Scale
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (about 1 medium) peeled, finely diced apple (like Granny Smith or Honeycrisp)
  • 2 teaspoons lemon juice
  • 1/2 cup (60g) quick oats
  • Optional: 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and finely dice your apple, toss with the lemon juice, and set aside.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. With a hand mixer or stand mixer, beat the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy—about 2 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in the quick oats and diced apples gently with a spatula.
  6. Line two baking sheets with parchment paper. Scoop tablespoon-sized balls of dough onto the sheets, spacing them 2 inches apart. Sprinkle with coarse sugar if desired.
  7. Bake for 11-13 minutes, or until the edges are golden and the centers are set. Cool for 5 minutes on the tray before transferring to a wire rack.

Notes

  • For the best texture, use quick oats rather than old-fashioned oats.
  • Don’t overmix the dough after adding the flour to keep your cookies tender.
  • If your apples are extra juicy, blot them dry with a paper towel to avoid excess moisture.
  • For a caramel drizzle, drizzle cooled cookies with caramel sauce.
  • Add 1/3 cup chopped walnuts or pecans for extra crunch.
  • For a gluten-free option, substitute a 1:1 gluten-free baking blend for the flour.
