  • 4 garlic cloves, minced

  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Add drained roasted red peppers, diced onion, garlic, and diced tomatoes to a blender. Pulse until smooth but slightly textured.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Pour in the blended pepper mixture.
  3. Add oregano, basil, and a pinch of red pepper flakes. Season with salt and black pepper to taste.
  4. Stir in 1/4 cup chicken broth and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until slightly thickened.
  5. Pat tilapia fillets dry with paper towels. Season both sides with salt, pepper, and garlic powder.
  6. Nestle the seasoned tilapia fillets into the simmering sauce and spoon some sauce over the fillets.
  7. Cover the skillet and reduce heat to medium-low. Cook for 5–7 minutes until the fish is opaque and flakes easily with a fork.
  8. Remove the skillet from heat. Let rest for 2 minutes. Sprinkle with chopped fresh parsley and optional garnishes. Serve immediately.
