- 1 cup blackberries
- 2 tablespoons chipotle peppers in adobo sauce, finely chopped

- 1 tablespoon honey
- 1 tablespoon apple cider vinegar

- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your grill or oven to medium-high heat.
- In a small saucepan, combine blackberries, chipotle peppers, honey, and apple cider vinegar. Cook the mixture over medium heat until the blackberries break down, about 5-7 minutes.
- Remove from heat and allow to cool slightly. Once cooled, use a blender or food processor to puree the blackberry mixture until smooth.
- Strain the sauce through a fine mesh sieve to remove seeds, and set aside.
- Pat the venison chops dry with paper towels.
- In a small bowl, mix olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the venison chops.
- Lightly oil the grill grates or a grill pan.
- Place the venison chops on the grill or grill pan. Cook the chops for 4-5 minutes per side, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Brush the chops with the blackberry-chipotle sauce during the last minute of cooking on each side.
- Remove the venison chops from the grill and let them rest for 5 minutes.
- Serve the venison chops with additional blackberry-chipotle sauce on the side.
