Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press about two-thirds of the cookie dough evenly into the bottom of the prepared baking pan to form the base crust for your blueberry pie cookie bars.
  7. In a medium bowl, gently toss the fresh blueberries with 1/2 cup sugar, cornstarch, lemon juice, and cinnamon (if using).
  8. Spread the blueberry filling evenly over the cookie dough base.
  9. Crumble the remaining one-third of the cookie dough over the blueberry filling to create a streusel topping for the blueberry crumble cookie bars.
  10. Bake for 35-45 minutes, or until the topping is golden brown and the blueberry filling is bubbly.
  11. Let the blueberry pie bars cool completely in the pan before cutting into squares.
  12. Serve your homemade blueberry pie cookies and enjoy!

Notes

  • For a chewier texture, slightly underbake the bars.
  • Ensure blueberries are evenly distributed for consistent flavor in every bite of your blueberry pie cookie bars.
  • Allow bars to cool completely for cleaner cuts.
  • These bars are a fantastic alternative to traditional blueberry pie.
