- 1 medium head of cauliflower, cut into bite-sized florets
- 3/4 cup all-purpose flour
- 3/4 cup water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 cup panko breadcrumbs
- 2/3 cup buffalo sauce
- 1 tablespoon melted butter or olive oil
- Optional for serving: celery sticks, vegan ranch or blue cheese dip
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and pepper until a smooth batter forms.
- Add the cauliflower florets to the batter and toss until well coated.
- One at a time, remove the florets from the batter, allowing any excess to drip off, and coat with panko breadcrumbs.
- Place the coated florets onto the prepared baking sheet in a single layer.
- Bake for 25 minutes, flipping halfway, until golden brown and crisp.
- While the cauliflower bakes, combine the buffalo sauce with the melted butter or olive oil.
- After 25 minutes, remove the cauliflower from the oven and gently toss with the buffalo sauce mixture until evenly coated.
- Return to the oven and bake for an additional 15 minutes.
- Serve hot with celery sticks and your favorite dip.
