  • 1 teaspoon garlic powder
  • 1 large flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced butternut squash with olive oil, salt, pepper, dried sage, and garlic powder until well-coated.
  3. Spread the seasoned butternut squash evenly on a baking sheet. Roast in the preheated oven for about 20-25 minutes or until the squash is tender and slightly caramelized. Stir halfway through roasting for even cooking.
  4. While the squash is roasting, cook the chopped bacon in a skillet over medium heat until it’s crispy. Once cooked, remove the bacon and drain on paper towels, but leave about 1 tablespoon of the bacon drippings in the pan.
  5. If you want to enhance the flavors, you can sauté the roasted squash in the reserved bacon drippings for an additional 2-3 minutes after removing it from the oven.
  6. On a baking sheet or pizza stone, place the flatbread. Layer it with the mozzarella cheese, followed by the roasted butternut squash, and sprinkle the crispy bacon on top. Then, add the crumbled feta cheese evenly over the top.
  7. Return the assembled flatbread to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  8. Once baked, remove from the oven and let it cool slightly. Garnish with fresh parsley before slicing into pieces. Serve warm and enjoy!
