  • 4 medium-sized russet potatoes, diced
  • 1 pound ground beef or turkey
  • 1 can (15 oz) chili beans, undrained
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (for serving)
  • Chopped green onions and fresh cilantro (for garnish)
  • Optional: ½ – 1 cup beef or vegetable broth

Instructions

  1. Wash and peel the russet potatoes. Dice them into small, even cubes.
  2. In a skillet over medium heat, brown the ground beef or turkey until no longer pink. Drain excess grease.
  3. Add minced garlic, diced onion, and bell pepper to the skillet. Sauté until vegetables are softened, about 5 minutes.
  4. In a crockpot, combine the diced potatoes, sautéed meat mixture, chili beans, diced tomatoes (with juices), chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  5. If desired, add ½ – 1 cup of broth for a soupier chili.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until potatoes are tender. Stir occasionally.
  7. Sprinkle the shredded cheddar cheese over the top during the last 15 minutes of cooking. Cover until the cheese is melted.
  8. Stir the melted cheese into the mixture. Serve hot in bowls with a dollop of sour cream.
  9. Garnish with chopped green onions and fresh cilantro.
