Cheesy Chili Potato Heaven is a comforting and hearty dish featuring tender potatoes, savory chili, and melted cheese. It’s an easy-to-make comfort food perfect for family meals or gatherings.
Ingredients
- 4 medium-sized russet potatoes, diced
- 1 pound ground beef or turkey
- 1 can (15 oz) chili beans, undrained
- 1 can (15 oz) diced tomatoes, with juices
- 1 cup onion, diced
- 1 cup bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1 cup sour cream (for serving)
- Chopped green onions and fresh cilantro (for garnish)
- Optional: ½ – 1 cup beef or vegetable broth
Instructions
- Wash and peel the russet potatoes. Dice them into small, even cubes.
- In a skillet over medium heat, brown the ground beef or turkey until no longer pink. Drain excess grease.
- Add minced garlic, diced onion, and bell pepper to the skillet. Sauté until vegetables are softened, about 5 minutes.
- In a crockpot, combine the diced potatoes, sautéed meat mixture, chili beans, diced tomatoes (with juices), chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
- If desired, add ½ – 1 cup of broth for a soupier chili.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until potatoes are tender. Stir occasionally.
- Sprinkle the shredded cheddar cheese over the top during the last 15 minutes of cooking. Cover until the cheese is melted.
- Stir the melted cheese into the mixture. Serve hot in bowls with a dollop of sour cream.
- Garnish with chopped green onions and fresh cilantro.
