Instructions

  1. Preheat your oven to 350F (180C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, white sugar, and brown sugar until fluffy.
  3. Beat in the egg, honey, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Fold in both the quick oats and old-fashioned oats until evenly distributed throughout the dough.
  7. Shape the dough into balls, about 1 to 1.5 tablespoons each. Place them on the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-13 minutes, or until the tops appear set.
  9. Let the cookies cool on the baking sheets for at least 10 minutes before transferring them to a wire rack to cool completely.
