  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter
  • 8 oz cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup Madeira wine
  • 1 cup low-sodium chicken broth
  • 1/3 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Pound chicken breasts to 1/2″ thickness. Season with salt and pepper. Lightly dredge in flour, shaking off excess.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Transfer chicken to a plate and cover.
  3. Add remaining 1 tablespoon olive oil and 2 tablespoons butter to the same skillet. Sauté mushrooms for 4 minutes until browned. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in Madeira wine and scrape up browned bits. Simmer for 3-4 minutes to reduce by half. Add chicken broth, cream, and Dijon mustard. Simmer for 5-6 minutes until slightly thickened. Stir in mozzarella cheese until melted and creamy.
  5. Return chicken to the sauce, spooning mushrooms and sauce over the top. Simmer for 2-3 minutes to heat through. Sprinkle with parsley and serve.
