Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 shallots, minced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon fresh rosemary, chopped, plus more for garnish
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 8 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken (rotisserie or leftover turkey works great)
  • 3/4 cup Acini di Pepe pasta
  • Salt and freshly ground black pepper, to taste
  • Optional: Fresh parsley, for garnish

Instructions

  1. In a large Dutch oven or soup pot, heat olive oil over medium heat.
  2. Add onions, shallots, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in garlic and sauté for 1 minute until fragrant.
  4. Add bay leaves, rosemary, and thyme. Stir to combine.
  5. Pour in the chicken broth and bring the soup to a gentle boil.
  6. Reduce heat and simmer for 10 minutes to meld the flavors.
  7. Stir in shredded chicken and Acini di Pepe pasta.
  8. Cook uncovered for 8–10 minutes, until pasta is tender.
  9. Season with salt and pepper to taste.
  10. Remove bay leaves before serving.
  11. Garnish with extra herbs and fresh parsley if desired.
