Instructions
- Place chicken breasts between plastic wrap and pound to ¼-inch thickness.
- Mix ricotta, parmesan, mozzarella, spinach, garlic powder, basil, salt, and pepper in a bowl.
- Lay out flattened chicken breasts and spread a thin layer of cheese filling, leaving a border. Roll tightly and secure with toothpicks.
- Dip each roll in beaten eggs, then roll in breadcrumbs.
- Baking Method: Preheat oven to 375°F (190°C). Arrange rolls in a greased baking dish and bake for 25-30 minutes until golden brown.
- Pan-Frying Method: Heat olive oil in a skillet over medium heat. Cook rolls for 3-4 minutes on each side until golden, then finish baking in the oven if needed.
- Air Frying Method: Preheat air fryer to 360°F (182°C). Place rolls in the basket and cook for 10-15 minutes, turning halfway.
- Let rolls rest for 5 minutes after cooking. Remove toothpicks, garnish with parsley and parmesan, and serve warm.
