  • ½ cup extra virgin olive oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (optional)
  • 2 tablespoons red wine vinegar
  • For the Bread:
  • 1 loaf of thick French bread
  • ½ cup parmesan cheese, grated
  • 1 cup shredded mozzarella cheese

Instructions

  1. Make the Chimichurri Sauce: In a bowl, combine chopped parsley, cilantro, red chili, oregano, minced garlic, olive oil, salt, and pepper. Add vinegar and mix well. Let sit for a few minutes for flavors to meld.
  2. Prepare the Bread: Preheat oven broiler. Slice French bread in half lengthwise. Spread chimichurri sauce evenly across both halves.
  3. Add Cheese: Sprinkle parmesan and mozzarella cheese over the chimichurri sauce.
  4. Broil the Bread: Place bread on the middle oven shelf under the broiler. Broil for 2–5 minutes, watching closely, until cheese is melted and edges are golden and crispy.
  5. Serve: Slice the bread and serve immediately.
