- Cinnamon sugar filling:
- 4 tablespoons unsalted butter, softened
- ⅓ cup brown sugar, packed
- 1½ tablespoons all purpose flour
- 2½ teaspoons ground cinnamon
- pinch salt
- Cookies:
- 1 cup unsalted butter, softened but still cool to the touch
- 1 ⅓ cups granulated sugar
- 1 ¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 ¾ cups all purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Cinnamon sugar filling: Mix all filling ingredients until combined. Freeze for 10 minutes.
- Cookies: Beat butter and sugar until creamy. Add vanilla, egg, and egg yolk; beat until combined.
- In a separate bowl, combine flour, baking powder, cornstarch, and salt. Add to wet ingredients and beat until combined.
- Remove half of the dough. Spread remaining dough in the mixing bowl.
- Scoop teaspoon-sized pieces of cinnamon mixture and place over dough in the bowl. Use half of the cinnamon mixture.
- Spread the reserved cookie dough evenly over the cinnamon layer
- Top with remaing cinnamon sugar bits.
- Fold and stir the dough until barely combined.
- Scoop dough into two-tablespoon portions.
- Freeze dough balls for 10 minutes.
- Place dough balls on baking sheets.
- Bake for 10-12 minutes, until edges are browned and the center is slightly underdone.
- Cool completely on wire racks.
Notes
- To Properly Measure Flour: Fluff the flour several times with your measuring cup (or a whisk) to lighten it. Lightly scoop a heaping portion and level it off with the back of a knife.
- How to shape cookies:
- Option 1: Immediately after the cookies come out of the oven place a round glass, bowl, or cookie cutter (larger than the cookie) upside down over the top of the cookie. Gently swirl the glass/bowl/cookie cutter in a circular motion. The edges of the cookie will bump against the inside of the glass creating a perfectly round shape. Note: This only works when the cookies are hot, straight from the oven, and still on the warm baking sheet.
- Option 2: Immediately after the cookies come out the oven use the back of a spoon to gently push the edges inward to create clean edges and a round shape.
