Description

This creamy and cheesy corn dip is an irresistible appetizer perfect for game days, cookouts, or holiday parties. Easy to make and always a crowd-pleaser.

Ingredients

Scale
  • 2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 12 jalapeños, seeded and diced (optional for heat)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a medium baking dish (about 2 quarts).
  2. In a large bowl, combine softened cream cheese, mayonnaise, and sour cream. Mix until smooth and creamy.
  3. Stir in corn, cheddar cheese, Monterey Jack cheese, green onions, and diced jalapeños.
  4. Sprinkle in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  5. Transfer the corn dip mixture into the prepared baking dish. Smooth the top.
  6. Bake for 20-25 minutes, or until bubbling and golden around the edges.
  7. Let the corn dip cool slightly. Garnish with extra green onions and a sprinkle of paprika. Serve warm with tortilla chips, crackers, or your favorite dippers.

Notes

  • Drain canned corn well to prevent a watery dip.
  • For an extra golden top, broil for 2-3 minutes after baking, watching closely to avoid burning.
  • Consider adding 1/4 cup cotija cheese and 1 tablespoon lime juice for a Mexican street corn variation.
  • Stir in 1/2 cup cooked, crumbled bacon for a bacon corn dip.
  • Mix in diced chipotle peppers or a dash of hot sauce for a spicier corn dip.
  • This corn dip is naturally gluten-free, but ensure your dippers are as well.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat until hot.
  • Freezing is not recommended as the creamy base may separate.
  • Use freshly shredded cheese for the best meltiness and flavor.
  • Allow cream cheese to soften completely for a smooth, lump-free dip.
  • Customize with add-ins like red bell pepper, olives, or diced tomatoes.
