Ingredients
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine rolled oats, almond flour, ground cinnamon, baking soda, and salt. Stir until fully blended.
- In another bowl, whisk together honey or maple syrup, unsweetened applesauce, melted coconut oil, and vanilla extract until well combined.
- Pour the wet mixture into the bowl of dry ingredients and stir until fully combined. If desired, fold in chopped nuts and dried fruit.
- Spread the mixture evenly into the prepared baking pan, pressing down firmly to ensure it holds together.
- Bake for 25-30 minutes, or until the bars are lightly golden on top and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper overhang.
- Transfer to a wire rack to cool completely before slicing into bars.
Notes
Store leftovers in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
