  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine rolled oats, almond flour, ground cinnamon, baking soda, and salt. Stir until fully blended.
  3. In another bowl, whisk together honey or maple syrup, unsweetened applesauce, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture into the bowl of dry ingredients and stir until fully combined. If desired, fold in chopped nuts and dried fruit.
  5. Spread the mixture evenly into the prepared baking pan, pressing down firmly to ensure it holds together.
  6. Bake for 25-30 minutes, or until the bars are lightly golden on top and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper overhang.
  8. Transfer to a wire rack to cool completely before slicing into bars.

Notes

Store leftovers in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
