Description

This is a simple and comforting American goulash recipe made in one pot. It features ground beef, pasta, and a rich tomato sauce, perfect for a quick and easy weeknight meal.


Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups elbow macaroni
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup frozen corn, optional
  • 1/4 cup sour cream, optional
  • Green onions for topping, optional
  • Hot sauce for serving, optional

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the uncooked elbow macaroni, diced tomatoes, tomato sauce, beef broth, tomato paste, Worcestershire sauce, paprika, oregano, garlic powder, and smoked paprika. Season with salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
  5. If using, stir in the frozen corn during the last 5 minutes of cooking.
  6. Once the pasta is cooked, remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
  7. Serve the cozy one pot American goulash hot. Top with sour cream, green onions, or hot sauce if desired.

Notes

  • This recipe is very forgiving. Feel free to adjust seasonings to your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
