Ingredients
Scale
- 1 lb ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups elbow macaroni
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1 cup frozen corn, optional
- 1/4 cup sour cream, optional
- Green onions for topping, optional
- Hot sauce for serving, optional
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the uncooked elbow macaroni, diced tomatoes, tomato sauce, beef broth, tomato paste, Worcestershire sauce, paprika, oregano, garlic powder, and smoked paprika. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
- If using, stir in the frozen corn during the last 5 minutes of cooking.
- Once the pasta is cooked, remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
- Serve the cozy one pot American goulash hot. Top with sour cream, green onions, or hot sauce if desired.
