  • 1 pound boneless skinless chicken breasts
  • 12 ounces rigatoni pasta
  • 4 tablespoons unsalted butter
  • 6 cloves minced garlic
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • A pinch of red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh chopped parsley for garnish

Instructions

  1. Boil a large pot of salted water and cook rigatoni pasta until al dente. Drain and set aside.
  2. Cut chicken into bite-sized cubes and season with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown and fully cooked, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, add butter and minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Add chicken broth and heavy cream. Bring to a simmer, then reduce heat to low and whisk in Parmesan cheese until melted and smooth.
  6. Return the chicken to the skillet, add cooked rigatoni, and toss everything together. Simmer for 2-3 minutes to blend flavors.
  7. Season with additional salt, black pepper, and red pepper flakes if desired. Garnish with parsley and serve warm.
