Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream or coconut milk
  • 1 cup fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  2. Once the sausage is cooked through, add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Pour in the chicken or vegetable broth and add the canned diced tomatoes. Bring to a boil.
  4. Add the ditalini pasta to the boiling soup. Cook according to package instructions, usually about 8-10 minutes, until al dente.
  5. Reduce the heat to low and stir in the heavy cream and fresh spinach. Cook for an additional 3-5 minutes until the spinach is wilted.
  6. Remove the pot from heat and stir in the grated Parmesan cheese until melted. Season with salt and pepper to taste.
