- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup ditalini pasta
- 1 cup heavy cream or coconut milk
- 1 cup fresh spinach
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
- Once the sausage is cooked through, add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Pour in the chicken or vegetable broth and add the canned diced tomatoes. Bring to a boil.
- Add the ditalini pasta to the boiling soup. Cook according to package instructions, usually about 8-10 minutes, until al dente.
- Reduce the heat to low and stir in the heavy cream and fresh spinach. Cook for an additional 3-5 minutes until the spinach is wilted.
- Remove the pot from heat and stir in the grated Parmesan cheese until melted. Season with salt and pepper to taste.
