A classic creamy vanilla slice featuring layers of crisp, buttery puff pastry and luscious vanilla custard. This easy-to-make dessert is perfect for any occasion, offering a delightful balance of textures and sweet vanilla flavor.

- 2 sheets puff pastry
- 1 liter milk
- 200g caster sugar
- 100g cornflour
- 4 large egg yolks
- 2 tsp vanilla extract
- 100g unsalted butter, softened
- Icing sugar, for dusting
Instructions
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Line a baking tray with parchment paper. Unroll the puff pastry sheets and place them on the prepared tray. Prick the pastry all over with a fork.
- Bake for 15-20 minutes, or until golden brown and puffed. If the pastry puffs up too much, gently press it down with a spatula halfway through baking. Let it cool completely.
- To make the custard, heat the milk in a saucepan over medium heat until it just begins to simmer.
- In a separate bowl, whisk together the caster sugar, cornflour, and egg yolks until smooth.
- Gradually pour the hot milk into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens. This will take about 5-10 minutes.
- Remove from heat and stir in the vanilla extract and softened butter until the butter is fully melted and incorporated.
- Pour the custard into a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming, and let it cool to room temperature.
- Once the pastry is completely cool, place one sheet on a serving platter.
- Spread the cooled custard evenly over the pastry base.
- Top with the second sheet of puff pastry.
- Dust generously with icing sugar.
- Cut into slices and serve.
Notes
- For extra flaky pastry, ensure your puff pastry is well-chilled before baking.
- If you prefer a firmer custard, you can add an extra tablespoon of cornflour.
- Allow the vanilla slice to chill in the refrigerator for at least 30 minutes before serving for easier slicing.
- Store any leftover creamy vanilla slice in an airtight container in the refrigerator for up to 3 days.
