Description

A classic creamy vanilla slice featuring layers of crisp, buttery puff pastry and luscious vanilla custard. This easy-to-make dessert is perfect for any occasion, offering a delightful balance of textures and sweet vanilla flavor.

  • 2 sheets puff pastry
  • 1 liter milk
  • 200g caster sugar
  • 100g cornflour
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 100g unsalted butter, softened
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. Line a baking tray with parchment paper. Unroll the puff pastry sheets and place them on the prepared tray. Prick the pastry all over with a fork.
  3. Bake for 15-20 minutes, or until golden brown and puffed. If the pastry puffs up too much, gently press it down with a spatula halfway through baking. Let it cool completely.
  4. To make the custard, heat the milk in a saucepan over medium heat until it just begins to simmer.
  5. In a separate bowl, whisk together the caster sugar, cornflour, and egg yolks until smooth.
  6. Gradually pour the hot milk into the egg mixture, whisking constantly.
  7. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens. This will take about 5-10 minutes.
  8. Remove from heat and stir in the vanilla extract and softened butter until the butter is fully melted and incorporated.
  9. Pour the custard into a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming, and let it cool to room temperature.
  10. Once the pastry is completely cool, place one sheet on a serving platter.
  11. Spread the cooled custard evenly over the pastry base.
  12. Top with the second sheet of puff pastry.
  13. Dust generously with icing sugar.
  14. Cut into slices and serve.

  • For extra flaky pastry, ensure your puff pastry is well-chilled before baking.
  • If you prefer a firmer custard, you can add an extra tablespoon of cornflour.
  • Allow the vanilla slice to chill in the refrigerator for at least 30 minutes before serving for easier slicing.
