  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • Salt and black pepper
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 cup white wine (optional)
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • Juice of half a lemon
  • Salt and white pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper.
  2. Set up dredging stations: Place flour in one shallow dish, beaten eggs in another, and panko breadcrumbs mixed with 1 cup Parmesan cheese, garlic powder, Italian seasoning, and paprika in a third.
  3. Dredge the chicken: Coat each chicken breast first in flour, then in egg, and finally in the panko mixture, pressing to adhere.
  4. Fry the chicken: Heat 1/4 cup olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Make the sauce: In the same skillet, add 2 tablespoons butter and 1 tablespoon olive oil. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Deglaze (optional): Pour in white wine and let it simmer for 1 minute.
  7. Add cream and broth: Stir in heavy cream and chicken broth. Bring to a simmer and cook until slightly thickened.
  8. Add cheese and seasoning: Stir in 3/4 cup Parmesan cheese, thyme, lemon juice, salt, and white pepper. Cook until the cheese is melted and the sauce is smooth.
  9. Combine: Return the crispy Parmesan chicken to the skillet and spoon the luscious garlic cream sauce over it.
  10. Garnish and serve: Garnish with fresh parsley and serve immediately.
