Description
Transform ordinary carrots into irresistible Crispy Smashed Carrot Bites. Boiled until tender, gently smashed, then roasted with savory seasonings and Parmesan, these bites offer a delightful crispy exterior and a soft, flavorful center.

- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Bring a pot of salted water to a boil. Add carrot rounds and cook for 10–12 minutes, or until fork-tender.
- Drain and let cool slightly.
- Place the cooked carrots on the baking sheet. Gently flatten each one using the bottom of a glass or measuring cup.
- Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, and black pepper.
- Top with Parmesan.
- Roast for 20–25 minutes, flipping halfway through, until golden and crisp on the edges.
- Garnish with chopped parsley and serve hot.
Notes
- For a spicier kick, add red pepper flakes.
- Make them dairy-free by omitting Parmesan or using vegan cheese.
- Serve with herbed yogurt or as a side to your favorite protein.
