Description

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 1.5 lbs small red potatoes, quartered
  • 2 tbsp cornstarch
  • 1/4 cup cold water

Instructions

  1. Pat the chuck roast dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned.
  3. Transfer the seared chuck roast to your slow cooker.
  4. Add the chopped onion, carrots, celery, and minced garlic around the roast.
  5. In a bowl, whisk together beef broth, red wine (if using), Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast and vegetables.
  6. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
  7. Add the quartered red potatoes to the slow cooker during the last 2-3 hours of cooking.
  8. Once the roast is done, remove it from the slow cooker and shred or slice it.
  9. To make the gravy, whisk cornstarch and cold water in a small bowl until smooth.
  10. Remove the vegetables from the slow cooker and set aside. Strain the liquid from the slow cooker into a saucepan.
  11. Bring the liquid to a simmer over medium heat. Gradually whisk in the cornstarch slurry until the gravy thickens. Season with salt and pepper to taste.
  12. Serve the shredded or sliced pot roast with the vegetables and gravy.

  • For a richer flavor, sear the chuck roast in a hot skillet before adding it to the slow cooker.
  • Feel free to add other vegetables like parsnips or turnips.
