Ingredients

  • 2 large cucumbers, diced
  • 1 cup crumbled feta cheese
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Wash and dice the cucumbers.
  2. Crumble the feta cheese.
  3. Pit and halve the Kalamata olives.
  4. Thinly slice the red onion.
  5. Chop the fresh dill and mint.
  6. In a large bowl, combine the diced cucumbers, crumbled feta cheese, Kalamata olives, red onion, dill, and mint.
  7. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.
  8. Pour the dressing over the cucumber and feta mixture.
  9. Season with salt and black pepper to taste.
  10. Toss gently to combine all ingredients.
