Description

Refreshing cucumber sandwiches with herbed cream cheese, perfect for picnics or tea parties.


Ingredients

  • 8 slices white or whole wheat bread
  • 1/2 cup cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cucumber, thinly sliced

Instructions

  1. Mix cream cheese, dill, mint, salt, and pepper in a small bowl.
  2. Spread the herbed cream cheese mixture evenly on one side of each bread slice.
  3. Arrange cucumber slices on four of the bread slices.
  4. Top with the remaining bread slices, cream cheese side down.
  5. Cut off crusts if desired, and cut sandwiches into halves or quarters.

Notes

  • For an extra touch, add a pinch of lemon zest to the cream cheese mixture.
  • Ensure cucumber slices are thin for the best texture.
