- 8 slices white or whole wheat bread
- 1/2 cup cream cheese, softened
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh mint, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cucumber, thinly sliced
Instructions
- Mix cream cheese, dill, mint, salt, and pepper in a small bowl.
- Spread the herbed cream cheese mixture evenly on one side of each bread slice.
- Arrange cucumber slices on four of the bread slices.
- Top with the remaining bread slices, cream cheese side down.
- Cut off crusts if desired, and cut sandwiches into halves or quarters.
Notes
- For an extra touch, add a pinch of lemon zest to the cream cheese mixture.
- Ensure cucumber slices are thin for the best texture.
