- 1 teaspoon pure vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined—lumps are okay! Overmixing leads to tough pancakes.
- Heat a non-stick skillet or griddle over medium heat (about 350°F/175°C) and lightly grease with butter. Scoop 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown and fluffy.

- Use whole milk for richer flavor and texture, but any milk works.
- For evenly cooked pancakes, keep your skillet at a steady medium heat—too hot, and the outsides will burn before the insides finish cooking.
