Description

These Garlic Parmesan Pizza Rolls are a delicious and easy-to-make snack or appetizer. They feature gooey mozzarella, nutty Parmesan, and savory garlic baked inside golden, pull-apart bites. Perfect for game days, casual dinners, or any occasion.

  • 1 lb (450 g) refrigerated pizza dough
  • 3 tbsp (42 g) unsalted butter, melted
  • 1 tbsp extra-virgin olive oil
  • 4 cloves garlic, finely minced
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 cup (113 g) low-moisture mozzarella, shredded
  • 3/4 cup (60 g) finely grated Parmesan cheese, divided
  • 2 tbsp chopped fresh parsley
  • 1 egg beaten with 1 tbsp water (optional)
  • 1 tbsp all-purpose flour (for dusting)
  • 1 cup (240 ml) warm marinara sauce, for dipping

Instructions

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix melted butter, olive oil, minced garlic, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper. Reserve 1 tablespoon for finishing.
  3. Lightly flour a counter and roll the pizza dough into a 12×14-inch rectangle, about 1/4 inch thick.
  4. Brush the dough with the garlic butter mixture, leaving a 1/2-inch border on one long side.
  5. Sprinkle evenly with mozzarella, 1/2 cup Parmesan, and parsley.
  6. Starting from the long edge opposite the border, roll into a tight log. Pinch the seam to seal and place seam-side down.
  7. Trim the ends and slice into 12 equal pieces.
  8. Arrange the slices cut-side up on the prepared baking sheet, spacing them 1.5 inches apart.
  9. Brush tops lightly with egg wash or remaining garlic butter.
  10. Bake for 14–16 minutes until puffed and golden.
  11. Immediately brush hot rolls with reserved garlic butter, sprinkle with the remaining 1/4 cup Parmesan, and more parsley.
  12. Rest for 5 minutes before serving warm with marinara sauce.

  • Let refrigerated dough sit at room temperature for 20-30 minutes before shaping for easier rolling.
  • For clean spirals, use unflavored dental floss for slicing.
  • Do not overfill with cheese to prevent blowouts and soggy centers.
