  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh basil
  • For the Green Goddess Dressing:
  • 1 cup plain Greek yogurt
  • 1/2 cup packed fresh spinach
  • 1/4 cup packed fresh parsley
  • 1/4 cup packed fresh basil
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While the pasta cooks, prepare the Green Goddess dressing. Combine all dressing ingredients in a blender or food processor. Blend until smooth and creamy.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, green beans, cucumber, and red onion.
  4. Pour the Green Goddess dressing over the pasta and vegetables. Toss gently to coat everything evenly.
  5. Stir in the fresh herbs (parsley, chives, dill, basil).
