Ingredients
- 2 cups old-fashioned rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 1 1/2 cups unsweetened almond milk
- 2 large eggs
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
- In a large bowl, whisk together the applesauce, maple syrup, almond milk, eggs, melted coconut oil, and vanilla extract until smooth.
- Add the oats, cinnamon, baking powder, and salt to the wet mixture. Stir until fully combined.
- Gently fold in the blueberries and nuts (if using), reserving a handful for topping.
- Pour the mixture into the prepared baking dish. Sprinkle the reserved blueberries on top.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Allow to cool for 10 minutes before slicing and serving warm.
Notes
- If using frozen blueberries, no need to thaw. Add a few extra minutes to the bake time.
- Ensure you use certified gluten-free oats if required.
- Feel free to use a mix of berries for added flavor.
- For a vegan option, substitute eggs with flax eggs and use plant-based milk.
