Description

Enjoy these simple Honey Toffee Cookies, a Swedish treat known as Kolasnittar. They offer a delightful chewy interior and crisp edges, perfect for any occasion.


Ingredients

Scale
  • 100 g butter
  • 90 g sugar
  • 1 tbsp vanilla sugar (or 1 tsp vanilla extract)
  • 1 tbsp honey (or Ljus Sirap/golden syrup)
  • 1 tbsp light syrup (omit if using honey only)
  • 1 tsp baking powder
  • 150 g all-purpose flour

Instructions

  1. Preheat oven to 180°C (356°F).
  2. Mix the butter and sugar until smooth.
  3. Add vanilla sugar (or extract), honey (or syrup), baking powder, and flour. Blend well.
  4. Divide dough into 3 equal parts.
  5. Roll each portion into logs and place them on a baking tray lined with parchment paper, leaving space between each roll.
  6. Gently flatten the rolls with your fingers.
  7. Bake for 12–14 minutes until golden.
  8. While still warm, slice the baked rolls diagonally into cookie strips.
  9. Let cool completely before serving.

Notes

  • These cookies are traditionally made with Ljus Sirap (Swedish golden syrup) but can be made with honey for a different flavor.
  • The cookie logs are sliced diagonally while still warm to create their signature shape.
