Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, cream butter, brown sugar, and granulated sugar together for 2–3 minutes until fluffy.
  3. Beat in eggs one at a time, followed by vanilla extract.
  4. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg (if using), and salt.

  7. Press dough into the prepared pan in an even layer.

  10. Once cooled, prepare icing by whisking together powdered sugar, milk or cream, vanilla extract, and optional salt. Adjust consistency if needed.
  11. Spread icing evenly over bars using a spatula.
  12. Let set at room temperature for 30–60 minutes.
  13. Lift out using parchment handles, cut into squares or rectangles, and serve.
