Ingredients

- 1–2 tbsp maple syrup
- ½ tsp vanilla extract (optional)
- Pinch of salt
- 2 tbsp Greek yogurt or coconut cream
Instructions
- In a bowl or mason jar, whisk together the plant-based milk, lemon juice, zest, maple syrup, vanilla extract (if using), and salt until combined.
- Slowly add chia seeds while whisking constantly to prevent clumping.
- Let mixture sit for 30 minutes at room temperature.
