  • 1.5 lbs boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: lime wedges, hot sauce

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a bowl, toss sweet potato cubes with 1 tablespoon of olive oil, salt, pepper, paprika, garlic powder, and cumin.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, paprika, garlic powder, and cumin.
  5. Brush the grill grates or grill pan with the remaining 1 tablespoon of olive oil.
  6. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  7. Let the grilled chicken rest for 5 minutes before slicing.
  8. Assemble the power bowls by dividing the roasted sweet potatoes and sliced grilled chicken into bowls.
  9. Top with sliced avocado and chopped cilantro.
  10. Serve immediately with optional lime wedges or hot sauce.
