Description

A refreshing and easy marinated cucumber salad with tomatoes and onions, perfect as a side dish or appetizer.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 medium red or white onion, thinly sliced
  • 1/2 cup apple cider vinegar or red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley or dill
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and dry the cucumbers and tomatoes. Slice cucumbers into thin rounds. Halve the tomatoes. Thinly slice the onion.
  2. In a mixing bowl, whisk together vinegar, olive oil, minced garlic, salt, pepper, and red pepper flakes (if using).
  3. Combine sliced cucumbers, tomatoes, and onions in a large bowl.
  4. Pour the marinade over the vegetables and toss gently to coat.
  5. Cover and refrigerate for at least 30 minutes, or for best results, marinate for a few hours or overnight.
  6. Before serving, toss the marinated cucumbers and vegetables. Garnish with fresh herbs. Serve chilled.

  • For best texture, use crisp cucumbers like English or Persian cucumbers.
  • Marinating overnight yields the most flavorful results.
