Ingredients

- 1/4 cup chopped chives or green onions

Instructions
- Preheat your oven to 400°F (200°C).
- Prick each small potato several times with a fork. This helps them cook evenly and prevents bursting.
- Toss the potatoes with olive oil, salt, and pepper.
- Arrange the seasoned potatoes in a single layer on a baking sheet.
- Bake for 30-40 minutes, or until the potatoes are tender when pierced with a fork. The exact time will depend on the size of your potatoes.
- Once baked, let the mini potatoes cool slightly until they are safe to handle.
- Cut each potato in half lengthwise.
- Scoop out a little bit of the fluffy potato flesh from the center of each half, creating a small well for the toppings. You can save the scooped-out potato for another use, like mashed potatoes.
- Place the potato halves back on the baking sheet, cut-side up.
