Description
This recipe shows you how to make a homemade rhubarb simple syrup. It’s a sweet and tart syrup with a vibrant pink color. You can use it in cocktails, desserts, and more.

- 3 cups fresh rhubarb, chopped
- 2 cups water
- 1½ cups granulated sugar
- 1 strip lemon peel (optional)
- 1 cinnamon stick (optional)
- 1 sprig fresh mint (optional)
Instructions
- Combine chopped rhubarb and water in a saucepan.
- Bring to a boil, then simmer for 20-25 minutes until rhubarb breaks down.
- Strain the mixture through a fine-mesh strainer into a bowl.
- Return the liquid to the saucepan, add sugar, and boil for 5 minutes, stirring until dissolved.
- Remove from heat and add optional flavorings if desired.
- Let steep for 10-30 minutes.
- Remove flavorings and cool completely.
- Pour into a clean jar or bottle and store in the refrigerator.
Notes
- Do not press the fruit during straining to avoid cloudiness.
- Adjust sugar to your taste.
- Syrup can be frozen for up to 3 months.
- Rhubarb syrup is naturally gluten-free, dairy-free, vegan, and nut-free.
