Description

This recipe shows you how to make a homemade rhubarb simple syrup. It’s a sweet and tart syrup with a vibrant pink color. You can use it in cocktails, desserts, and more.


Ingredients

Scale
  • 3 cups fresh rhubarb, chopped
  • 2 cups water
  • 1½ cups granulated sugar
  • 1 strip lemon peel (optional)
  • 1 cinnamon stick (optional)
  • 1 sprig fresh mint (optional)

Instructions

  1. Combine chopped rhubarb and water in a saucepan.
  2. Bring to a boil, then simmer for 20-25 minutes until rhubarb breaks down.
  3. Strain the mixture through a fine-mesh strainer into a bowl.
  4. Return the liquid to the saucepan, add sugar, and boil for 5 minutes, stirring until dissolved.
  5. Remove from heat and add optional flavorings if desired.
  6. Let steep for 10-30 minutes.
  7. Remove flavorings and cool completely.
  8. Pour into a clean jar or bottle and store in the refrigerator.

Notes

  • Do not press the fruit during straining to avoid cloudiness.
  • Adjust sugar to your taste.
  • Syrup can be frozen for up to 3 months.
  • Rhubarb syrup is naturally gluten-free, dairy-free, vegan, and nut-free.
