Instructions
- Cook breakfast sausage in a skillet until browned. Drain excess grease and set aside.
- Whisk eggs in a bowl with salt and pepper. Scramble eggs in the same skillet until cooked but still soft. Remove from heat.
- Warm tortillas slightly to make them pliable.
- Assemble each tortilla by adding a portion of scrambled eggs, cooked sausage, and shredded cheese.
- Roll up tightly, folding in the sides like a burrito.
- Melt butter in a clean skillet over medium heat. Place roll-ups seam-side down and cook for 2–3 minutes per side until golden and crispy.
- Slice and serve warm, or let cool and wrap for later.
