Description

This easy skillet chicken thighs recipe delivers juicy, flavorful chicken with crispy skin in under 30 minutes. It’s a perfect weeknight meal that’s simple to make and always a crowd-pleaser.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian seasoning
  • Optional: 1/2 teaspoon crushed red pepper flakes
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels.
  2. In a small bowl, mix together salt, pepper, garlic powder, smoked paprika, and Italian seasoning. Sprinkle the spice blend evenly over both sides of the chicken thighs.
  3. Heat the olive oil in a large, oven-safe skillet over medium-high heat until shimmering.
  4. Place the chicken thighs, skin side down, in the hot skillet. Sear for 6-7 minutes without moving, until the skin is crispy and golden brown.
  5. Flip the chicken thighs skin side up, reduce heat to medium, and cook for another 14-16 minutes, or until the internal temperature reaches 175°F (80°C).
  6. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For extra flavor, marinate the chicken thighs in the seasoning blend and olive oil for up to 2 hours beforehand.
  • Pat the chicken very dry to maximize skin crispiness.
  • Do not overcrowd the skillet; work in batches if necessary.
  • For a lemon herb variation, add 1 tablespoon fresh lemon juice and zest to the seasoning.
  • For a spicy Cajun variation, swap Italian seasoning for Cajun spice blend and add a pinch of cayenne.
  • For a honey garlic variation, drizzle 2 tablespoons honey and 2 minced garlic cloves over the chicken in the last 3 minutes of cooking.
  • Leftover chicken thighs can be refrigerated in an airtight container for up to 4 days. Reheat in a 350°F (175°C) oven for 10-12 minutes.
