Ingredients
- 4 bone-in pork chops (about 1-inch thick)
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 3 garlic cloves, minced
- 2 cups chicken broth
- 1 teaspoon dried thyme
Instructions
- Season pork chops with salt, pepper, and paprika. Dredge lightly in flour.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops until golden brown on both sides. Remove from skillet.
- Add sliced onions to the skillet and cook until soft and golden. Add garlic and cook for 1 minute.
- Sprinkle 2 tablespoons of flour over the onions and stir. Slowly add chicken broth, whisking to create a smooth gravy. Stir in thyme.
- Return pork chops to the skillet, nestling them into the gravy. Cover and simmer on low heat for 20-25 minutes, or until pork is cooked through.
- Serve smothered pork chops hot with extra gravy.
Notes
- For best results, use bone-in pork chops.
- If the gravy is too thick, add a splash of chicken broth.
- Avoid overcrowding the pan when searing pork chops.
