Ingredients
- 4 tablespoons unsalted butter, softened
- ⅓ cup packed brown sugar
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch of salt
- 1 cup unsalted butter, softened but cool
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- For the cinnamon sugar mixture: In a bowl, mix softened butter, brown sugar, flour, cinnamon, and salt until combined.
- For the cookie dough: Cream together cooled butter and granulated sugar until fluffy. Add vanilla extract, egg, and yolk; mix well. Gradually stir in flour, baking powder, cornstarch, and salt until a dough forms.
- Gently fold the cinnamon sugar mixture into the cookie dough until just combined.
- Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions onto a parchment-lined baking sheet, spacing them about two inches apart. Bake for about 10 minutes or until edges are lightly golden. Allow cooling before enjoying.
