Juicy homemade Southern sausage patties seared to golden perfection and smothered in rich, creamy pepper gravy. A classic Southern breakfast that’s quick, hearty, and full of down-home flavor.

- 1 lb ground pork
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- 1 tsp dried sage or 1 tbsp fresh chopped sage
- 1 tbsp maple syrup (optional)
- 2 tbsp pork drippings or unsalted butter
- 2 tbsp all-purpose flour
- 1 1/2 cups whole milk (more as needed)
- 1/2 tsp salt
- 1 tsp freshly cracked black pepper (or to taste)
Instructions
- In a large bowl, mix ground pork with salt, pepper, garlic powder, onion powder, paprika, red pepper flakes (if using), sage, and maple syrup. Do not overmix.
- Form into 6 to 8 Southern sausage patties about 3 inches wide and 1/2 inch thick.
- Heat a skillet over medium heat. Add sausage patties and cook 4–5 minutes per side or until browned and cooked through. Remove patties and leave 2 tbsp drippings in the pan.
- For the pepper gravy, reduce heat to medium-low. Add flour to the drippings and whisk for 1 minute to make a roux.
- Slowly add milk while whisking to avoid lumps. Cook until thickened, about 3–5 minutes. Season with salt and plenty of black pepper.
- Spoon hot pepper gravy over the Southern sausage patties and serve immediately.
Notes
- Don’t press down on the patties while cooking – it squeezes out the juices.
- For extra flavor, use bacon grease in place of butter for the gravy.
- Adjust gravy thickness by adding more milk a little at a time.
- Maple syrup in the patties adds subtle sweetness and balances the spice.
