  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup buttermilk
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the pumpkin puree until just combined.
  6. Add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix the batter for your spiced pumpkin bread.
  7. In a small bowl, combine the 1/4 cup granulated sugar and 1 tablespoon cinnamon for the topping.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the cinnamon sugar topping evenly over the batter.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center of the spiced pumpkin bliss bread comes out clean.
  10. If the top browns too quickly, tent the loaf with aluminum foil.
  11. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
