  • 2 packs ramen noodles (without seasoning)
  • 2 soft-boiled eggs, halved
  • 2 green onions, sliced
  • 1 sheet nori, cut into strips
  • Sriracha, to taste (optional)

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  2. Pour in chicken broth and water. Stir in soy sauce and chili paste. Bring to a gentle boil.
  3. Add shiitake mushrooms and corn. Simmer for 10 minutes to allow flavors to meld.
  4. Cook ramen noodles according to package instructions in a separate pot. Drain and set aside.
  5. Divide noodles among 4 bowls. Ladle spicy broth and vegetables over noodles.
  6. Top each bowl with soft-boiled egg halves, green onions, and nori strips. Serve immediately with Sriracha if desired.

Notes

  • For extra umami, add a splash of fish sauce or a piece of dried seaweed to the broth during simmering.
  • If you prefer a milder broth, reduce the chili paste or skip the Sriracha garnish.
  • Use low-sodium broth to better control the saltiness of your ramen.
