Description
A comforting and flavorful oven-baked dish that captures the essence of sushi with layers of sticky rice, spicy salmon, and creamy avocado.
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 pound salmon fillet, skinless
- 2 tablespoons mayonnaise
- 2 tablespoons sriracha sauce
- 1 teaspoon sesame oil
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- 1 sheet nori, cut into strips
- Soy sauce, for serving
Instructions
- Preheat oven to 375°F (190°C).
- Rinse sushi rice under cold water until the water runs clear.
- Combine rice and water in a rice cooker or pot. Cook until tender.
- In a small bowl, dissolve rice vinegar, sugar, and salt. Gently fold into cooked rice. Let cool slightly.
- Bake salmon fillet for 15–20 minutes until cooked through. Flake with a fork.
- In a bowl, mix flaked salmon with mayonnaise, sriracha, and sesame oil to create the spicy salmon mixture.
- Spread the seasoned sushi rice evenly in a baking dish.
- Layer the spicy salmon mixture on top of the rice.
- Bake for 10–15 minutes until heated through and slightly crispy on top.
- Top the spicy salmon sushi bake with avocado slices and chopped green onions.
- Serve with nori strips and soy sauce on the side.

- Adjust sriracha sauce quantity to your spice preference.
- This dish is great for feeding a crowd or as a weeknight dinner.
