Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 6 garlic cloves, minced
  • 1 pound Cremini mushrooms, cleaned and sliced
  • 2¼ cups half-and-half
  • 1 pound pasta of your choice
  • 8 oz spinach
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons flat-leaf parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook pasta until just under al dente.
  2. While pasta cooks, heat olive oil in a deep skillet over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  3. Add sliced mushrooms to the skillet, season with salt and pepper. Cook until golden and tender, about 8 minutes.
  4. Add spinach to the skillet and cook until wilted.
  5. Pour in half-and-half. Bring to a gentle boil, then simmer until the sauce slightly thickens, about 4 minutes.
  6. Drain the pasta, reserving about half a cup of pasta water.
  7. Combine the drained pasta with the sauce in the skillet. Add chopped parsley and grated Parmesan cheese. Toss well.
  8. Gradually add reserved pasta water as needed to reach desired consistency.
  9. Season to taste with salt and pepper. Serve immediately.

  • Use fresh spinach and mushrooms for the best flavor and texture.
  • Cook pasta al dente as it will finish cooking in the sauce.
  • Reserve pasta water to adjust sauce consistency.
  • Freshly grated Parmesan cheese melts better than pre-grated.
