Description
A no-bake Strawberry Dream Crunch Cake featuring layers of fresh strawberries, creamy filling, and a crunchy graham cracker-coconut topping. This easy-to-make dessert is perfect for any occasion.
Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar, divided
- 1/2 cup unsalted butter, melted
- 2 cups graham cracker crumbs
- 1 cup coconut flakes (sweetened or unsweetened)
- 1 cup heavy whipping cream
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
Instructions
- Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with 1/4 cup of granulated sugar. Toss gently and let them macerate for at least 30 minutes to release their juices.
- Make the Crunch Topping: In a medium bowl, mix together the melted butter, graham cracker crumbs, remaining 3/4 cup of granulated sugar, and coconut flakes until well combined. Use your hands to crumble any large lumps and set aside.
- Prepare the Cream Cheese Layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the heavy whipping cream, vanilla extract, and powdered sugar, and continue mixing until it forms soft peaks.
- Layer the Cake: In a 9×13 inch dish, spread half of the cream cheese mixture evenly across the bottom. Then, layer half of the macerated strawberries over the cream. Sprinkle half of the crunch topping over the strawberries.
- Repeat the Layers: Add another layer of the remaining cream cheese mixture on top, followed by the rest of the strawberries, and finish with the remaining crunch topping, ensuring an even distribution.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Serve: Once chilled, slice the cake, serve on plates, and enjoy a delightful burst of flavors and textures!
Notes
- For best results, use ripe, fresh strawberries.
- Ensure cream cheese is softened to room temperature for a smooth filling.
- Chilling overnight allows the flavors to meld more effectively.
