Ingredients
- 2 pieces Cooked Chicken, shredded
- 2 pieces Tortillas, soft flour or whole wheat
- 1/2 cup Sweet Chili Sauce
- 2 cups Lettuce or Greens
- 1 piece Cucumber, thinly sliced
- 1/2 cup Shredded Carrots
- 1 piece Red Onion, thinly sliced
- 1 piece Avocado, sliced
- 1/2 cup Shredded Cheese, optional
- 1 tablespoon Lime Juice
- Salt and Pepper to taste
Instructions
- Prepare the chicken: If not using leftover chicken, cook it by boiling, baking, or grilling until done. Shred into bite-sized pieces.
- Mix chicken: In a large bowl, combine the shredded chicken with sweet chili sauce. Toss gently until evenly coated.
- Prepare vegetables: Wash and shred lettuce. Thinly slice cucumber and red onion. Shred carrots. Slice avocado just before assembly.
- Assemble wrap: Lay a tortilla flat. Layer with lettuce, chicken mixture, carrots, cucumber, onion, and avocado. Sprinkle with cheese if using.
- Season and wrap: Drizzle with lime juice, season with salt and pepper. Fold the sides of the tortilla inward, then roll tightly from the bottom to the top.
