Description

A vibrant and flavorful Thai Quinoa Crunch Salad featuring nutty quinoa, crisp vegetables, and a creamy peanut dressing. This salad is perfect for a healthy lunch, side dish, or meal prep.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup shredded carrots
  • 1/4 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 2 tablespoons sesame seeds
  • 1 tablespoon rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. Combine quinoa with 2 cups of water in a saucepan.
  2. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes, or until water is absorbed.
  3. Fluff the quinoa with a fork and let it cool for 10 minutes.
  4. In a small bowl, whisk together rice vinegar, soy sauce, peanut butter, honey, lime juice, and a pinch of salt to create the dressing.
  5. In a large bowl, combine the cooked quinoa, diced red bell pepper, diced cucumber, shredded carrots, sliced green onions, and chopped cilantro.
  6. Pour the dressing over the salad and toss well to combine.
  7. Garnish with chopped peanuts and sesame seeds. Add additional cilantro if desired.
  8. Serve chilled or at room temperature.

Notes

  • For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
  • Adjust spice level by adding chili flakes or sriracha to the dressing.
  • This salad is excellent for meal prepping; store dressing separately if preparing ahead.
