  • 2 tablespoons Unsalted Butter (or vegan butter)
  • 3 cloves Garlic, minced
  • 0.5 cup Sundried Tomatoes, chopped (or roasted grape tomatoes)
  • 1 tablespoon Tomato Paste (or fresh tomatoes)
  • 1 tablespoon Tuscan Marry Me Blend
  • 0.5 teaspoon Sea Salt, adjust to taste
  • 0.5 cup Organic Heavy Cream (or coconut cream for vegan)
  • 1 cup Organic Vegetable Stock (gluten-free if needed)
  • 0.25 cup White Cooking Wine (omit or use more stock if preferred)
  • Juice from 0.5 Freshly-Squeezed Lemon
  • 2 cups Chopped Kale (or spinach/collards)
  • 0.5 cup Freshly-Grated Parmesan (or dairy-free cheese)

Instructions

  1. In a medium skillet, melt 2 tablespoons of unsalted butter over medium heat until bubbly and fragrant.
  2. Add 3 minced garlic cloves to the melted butter and sauté for about 1 minute until fragrant.
  3. Stir in 1 tablespoon of the Tuscan Marry Me blend, ½ teaspoon of sea salt, ½ cup of chopped sundried tomatoes, and 2 tablespoons of tomato paste. Mix well.
  4. Gradually pour in ½ cup of organic heavy cream, 1 cup of organic vegetable stock, juice from ½ a lemon, and ¼ cup of white cooking wine. Let the sauce simmer for 1-2 minutes.
  5. Whisk in ½ cup of freshly-grated Parmesan cheese until melted and the sauce thickens, about 2-3 minutes.
  6. Add 2 cups of chopped kale and 1 can of drained butter beans. Simmer for 5-6 minutes until beans are warmed through and kale has softened.
  7. Serve hot, garnished with additional Parmesan.
