  • Pinch of cinnamon

Instructions

  1. Peel the butternut squash, cut it in half lengthwise, scoop out the seeds, and cube the flesh into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add the cubed butternut squash to the pot and stir to combine with the aromatics.
  5. Pour in the vegetable or chicken broth and bring the mixture to a gentle boil.
  6. Reduce heat, cover, and simmer for 20-25 minutes, or until the squash is tender.
  7. Use an immersion blender to blend the soup directly in the pot until smooth and velvety. Alternatively, carefully transfer the soup in batches to a countertop blender and blend until smooth, then return to the pot.
  8. Stir in the coconut milk or heavy cream and heat gently over low heat without boiling. Add nutmeg and cinnamon.
  9. Season with salt, pepper, and optional maple syrup to taste.
  10. Serve hot, garnished with toasted pumpkin seeds, fresh herbs, or a dash of paprika if desired.
